Winemaker’s Notes:

Harvested in 2010 and 2011, this Blanc de Blancs was crafted using the traditional method, beginning with whole-cluster pressing of the best Chardonnay grapes and a classic prise de mousse fermentation. The wine then rested for more than ten years in the cool quiet of our cellar, developing depth, elegance, and complexity.

The bouquet is rich and expressive, showing notes of toasted brioche, marzipan, and subtle citrus. On the palate, the long lees ageing brings a smooth, creamy texture softened by delicate bubbles. A bone-dry finish keeps everything lifted and refined, with a touch of Riesling Icewine added to round out the structure.

Elegant, generous, and full of character, Savage Brut shines on its own or paired with your favourite snacks. From oysters and charcuterie to fried chicken or kettle chips, this sparkling wine elevates any occasion.
